Chunky Guacamole

This easy recipe makes enough guacamole for 2 people sharing, but feel free to scale up the quantities for 4 people if needed by just doubling everything!

You will need:
1 x Avocado
Generous squeeze of Lemon/Lime
½ a small red onion
5 x cherry tomatoes

To make the dip:
Scoop out your avocado and mash it in a bowl, immediately squeezing over your lemon/lime juice to stop it browning.
Finely chop your red onion and slice up your tomatoes into small pieces and then mix these in with the avocado.
Then that’s your guacamole done, it’s that simple!
To make it a bit different you can always add chopped coriander to the dip too.

I thought this recipe tasted great with our Ridge Cut Caramelised Red Onion Crisps, but if you’re a fan of spice then it would be the perfect accompaniment to our Scotch Bonnet Chilli Pepper Crisps!
