Fruit & Nut Popcorn Bars
These quick & easy fruit and nut bars make a great energy-filled healthy snack!
Mackie’s Fruit and Nut Popcorn Bars
½ packet of Mackie’s Sweet & Salted Popcorn, gently whizzed up
100g rolled oats
100g dried apricots, chopped
100g pecan nuts, chopped
150g Dark soft brown sugar
50g toasted sunflower seeds
4 tablespoons honey
Line a shallow tin or dish with clingfilm.
Put the sugar and honey in a large pan and dissolve over a low heat.
Add the rest of the ingredients and mix well, then quickly transfer to the lined tin and press down, this is easiest with dampened hands.
Leave to cool and firm up for about an hour.
Tip out onto a board, remove the clingfilm, and cut into bars or squares.
If you want to make them extra special, you can drizzle some melted Mackie’s chocolate over the top before cooling.
